Life is just "peachy"
Tonight was officially "Peach Night". I'm concerned the peaches aren't going to be good the colder it gets so i went and got a box from a little fruit stand and then realized that is a ridiculous amount of peaches for anyone to have and that they were gonna go bad so i had to use them immediately. Therefore, 1 peach cobbler, 2 peach pies, and a dozen taken to my sisters house later, I have considerably less peaches on my hands. Everyone loved the peach crisp though, with vanilla ice cream! It was real good, not too shabby for my first time making it. Also a recipe from my cousin for no-bake peach pie turned out so good. I've already eaten 1/4th of one of the pies. My justification for all this peach consumption is that they are good for you! I'm just gonna keep telling myself that.
p.s. Here's the recipe for the peach pie, I highly recommend trying it.
Delicious when peaches are at their ripest.
2 tablespoons cornstarch
3/4 cup sugar
1/2 cup peach puree
1/2 cup water
2 tablespoons lemon juice
1 small package (3 ounces) cream cheese
1/4 cup powdered sugar
9 inch baked pie shell
4 cups sliced peaches
Directions:
In pan combine cornstarch and sugar; blend in peach puree, water and lemon juice. Bring to boil, stirring; boil until thickened and clear. Remove from heat; cool. Beat together cream cheese and powdered sugar until smooth. Spread evenly in the pie shell. Spoon the sliced peaches over the cream cheese; pour cooled puree mixture over peaches. Chill until serving time. (Can easily be doubled for 2 pies, just 1 goes fast!)
