People have been asking me for this recipe, it's as popular as it is easy so I decided to post it. My mom made this all the time for us and we are addicted now. I don't actually follow the recipe anymore I just adjust it till it tastes right to me, and you can add whatever to it, it's so versatile. Anyways here it is everyone that has been asking me! And for those who haven't, try it!
Val's Chicken & Rice
-2-3 chicken breasts (depending on the size of the chicken breasts and how much you want to make)
-Approx. 1/2 to 1/3 cup sour cream
-1 can cream of chicken or cream of mushroom soup- depends if you like mushrooms or no. I usually use the cream of mushroom and you can’t tell too much.
-1 box chicken flavor Rice-a-Roni (or you could use a family size box if you are making a lot)
Optional:
-Green beans
-Mushroom stems and pieces (the small can) SO yummy!! I reccomend this if you like mushrooms.
Boil the chicken till the insides aren’t pink, and while you’re doing that make the rice a roni (use the package directions and be careful not to make it too mushy but cook long enough so the rice isn’t hard!) and while that is going get a big bowl and mix the sour cream and cream of chicken/cream of mushroom soup together and just mix in enough sour cream so when you taste it it tastes good, not too strong of a chicken or mushroom soup taste… then add the green beans or mushrooms or whatever you like. Then fold in the chicken and rice, being careful not to get everything mushy or crush the rice… then put it in a 13"x9" baking pan and what I like to do is crush some bread crumbs in a food processor and spread those across the top, so when it cooks it gets a nice crust. Then bake for 30 minutes at 350 degrees but check it to make sure the crumbs don’t burn, everything is already cooked so its just to heat it up, then take it out when the bread crumbs are nice and golden brown! Delicious. Goes great with salad and rolls!
