Low Cal/ Low Carb Chocolate Cheesecake Pie!

We've been trying to eat better at the Welling household, and get creative with low carb and lower calorie foods, well here is an amazing piece of wonder we created with only 180 calories and 13 grams of carbs per slice...AND next time I'm confident we can get it even lower. Version 2.0 coming soon. For now, here is how we made this AMAZING low calorie & low carb Cheesecake Chocolate Pie...


1 box fat free/sugar free Cheesecake flavored Jello pudding mix
1 box fat free/sugar free Chocolate flavored Jello pudding mix
a little over 1 c. almonds
1/2 c. pecans
1/2 c. walnuts
4 T. butter
a little less than 1 tsp. Sweet & Low
Fat Free Cool Whip
Skim or 1% Milk


Make the crust by blending up your nuts, we used our Blendtec but a food processor would work equally well. Get them as fine as you can! Then add the Sweet & Low to the blender/predecessor and mix a few more times to incorporate. **At this point you can add a little cinnamon if you want! 
 Remove to a bowl, and add 4 T. melted butter. **Honestly you could probably use 3 T, ours was still crumbly and not very firm, but it was still amazing and did hold up to cut. 

Press the nut mixture into a pie pan, try to get it pretty thin! I swear it expands a little when baking. Bake at 350 for 10-15 minutes. When that is done throw it in the freezer, because you're not going to want to wait for that to cool down at room temp, promise. While it's chillin', make the cheesecake pudding according to the "Pie filling" directions on the side, I think you add 1 3/4 c. milk and whisk till it gets a little thick, then pour over the crust and smooth out. Let that sit in the fridge for 20-30 minutes till it's pretty thick. Then mix up the chocolate pudding mix the same, and layer that on top of the cheesecake layer. Then stick it back in the fridge for 30-45 minutes, till its firm and pie looking. Then take out, carefully cut and add whipped topping to your liking. 
Then EAT because it's so good. 

This definitely tided us over until TOMORROW which is THANKSGIVING!

Remember when I told you about hot honey & lemon water for a sore throat? Turns out I still love it even though I'm not sick. This last week I've been brewing up a cup at night when I get the munchies/sweet tooth before bed, and sipping on  that miraculously makes my cravings go away! No joke, I love it. So tasty and just enough sweet to satisfy my cravings... Love it.
